Weekend Collett Style

I’m sure we are no different than most families who look forward to the weekends.   It’s the time of the week where we can accomplish tasks and have fun doing it, a time where we can start a little later and not stress and just enjoy our precious days together.

Our weekend begins with movie night one of my favorites because typically I don’t have to cook this weekend was a wee bit different because I really wanted to have homemade pizza and I was off so it all worked out very well.

Here is my pizza night recipies:)

The Sauce:

  • 4-5 chopped tomatoes or 2 cans of diced
  • Half can of tomato sauce
  • 4-8 cloves of garlic
  • 3 sprigs of fresh oregano or to taste
  • 1 spring of fresh rosemary
  • 1 tsp of red pepper flakes
  • 1tbl of kosher salt
  • 1 tsp pepper
  • 2 good turns of olive oil

Then taste and add above until it suits you!!!  Have fun with it and you can’t go wrong here.

Toppings:

  • Portobello mushrooms
  • Thin sweet onions
  • Banana peppers
  • Good quality pepperoni
  • A good mozzarella and a dry
  • Pamesean
  • Olives black or kalamata
  • Whatever else floats your boat

Dough:

So I typically make my own but I so love going to my favorite local NY style pizzeria and stocking up on theirs I get about 10 balls for 10 bucks!!!   I’ll include some of my go to recipes later!!

Place your pizza stones in a super hot as it can go oven and cook for about 10 to 15 minutes or less depending on your oven.

Then kick back and enjoy your own creation!

Breakfast on Saturday morning is fun!  Though it makes me a wee bit sad that Gabe used to be the one in the kitchen at 7 but now the torch is passed and Tom and Jerry trumps me in the morning.

But this girl right here is a great taste tester!!!

Today and from now on I am trying to introduce more protien less fat and less gluten.  I recently bought Bob’s Red Mill gluten free pancake mix.

And everyone loved them !  I was shocked!  Jay noticed the slightly different texture but all in all we give it 4 stars!

Next up some shopping with my mama and Ana while Jay and Gabe do boy time.

My little girl is a trooper!  Even though I do wish she would wear a bow or something to catch that hair.

Today we hit up Home Goods and wa la my entry space looks a little less drab…

I’ve been trying to find things to go on this wall and today I think I did pretty good!!  Thanks Ma!!


All in all a great Saturday ending with Brusters I had the cayenne chocolate chunk To DIE FOR!!!
